Happy Birthday BOMF Boston!

This morning Back on My Feet Boston celebrated their one year birthday with a huge celebratory breakfast at the Renaissance Boston Waterfront Hotel.

We not only had the pleasure of having a wonderful breakfast but we were also blessed to hear the stories of some inspirational individuals of the BOMF community.

Jim Boyle from John Hancock was one of the main speakers of the morning. Jim concluded his speech with an introduction to the Founder and President of Back on My Feet Anne Mahlum. Anne shared her childhood story with us which led her to wanting to run and eventually inspired her to create the BOMF organization.
Anne speaking about her life story (sorry about the blurriness the lighting wasn't very good)
After Anne finished her speech a very special speaker was introduced, Steve Karagiozis, who is a current BOMF team member with Team Mission and has been with team since day one. Steve has battled his entire life with an alcohol and drug addiction, but has been sober now for the last 18 months of his life and is currently living in his own room and his own space. I got choked up several times throughout Steve's speech as it made me feel that we are making a difference in these residents lives, because there are some days where it is easy to get discouraged. Steve ended his speech by saying BOMF has helped make him “the epitome of potential.”

The celebration ended with a resident team member presenting a plaque to their team leader on stage.

Day Off @ Castle Island

Today I took the day off from work to watch my niece Abigail. I stayed at my sisters last night because she leaves for work bright and early. We started the morning with a trip to Marylou's for some iced coffee then we headed to drop Kristina off at work. Abigail and I headed over to Castle Island after dropping mommy off at work for a nice morning walk. As you can see Abigail was so thrilled to be there since she slept the whole time.

It was a gorgeous morning for a nice long walk as the weather was partly cloudy and about 70 degrees. We walked about three miles around Castle Island where I enjoyed the beautiful views. (I think Joe and I are going to have our engagement pictures done around here).

After our walk Abigail and I headed to my house for a little while where she got to enjoy some tummy time!
Tummy Time!
Then it was back home for Abigail where my dad joined us for lunch, which wad leftover spicy chicken pizza that my mom made for dinner last night. This pizza is one of my favorite meals my mom makes.

Spicy Chicken Pizza
package chicken chopped into cubes
1/2 cup green onion
2 garlic cloves minced
2 tbl red wine vinegar
2 tbl olive oil
1/2 tsp crushed red pepper
1 tbl corn starch
1/2 cup monterey jack shredded cheese
1/2 shredded mozzarella
sliced almonds
2 Boboli crusts

Mix green onion, garlic, soy sauce, vinegar, olive oil and chicken together in a bowl and let stand for a half hour.  Add chicken to a pan and cook until done leaving the remaining sauce in the bowl. Add the corn starch to the remaining sauce. Once the chicken is cooked through add the remaining sauce to the pan until the sauce is thick in consistency. Take the chicken mixture and spread it evenly between the two Boboli crusts (the wheat Boboli is what I usually use). Then top with the mozzarella and monterey jack cheese and let cook. Halfway through the pizza cooking you can place the almonds on top so they won't burn. Cook on 350 until the cheese is melted and the crust is crispy, enjoy!

WIAW

Welcome to another week of WIAW inspired by Jen over at Peas and Crayons.
Peas and Crayons
This morning for breakfast was an ezekiel cinnamon raisin english muffin topped with chunky peanut butter and banana.

Lunch was a mini summer burrito bowl from Boloco with no cheese and brown rice. The mango salsa made this dish, it was so yummy!

After lunch I had a little dessert (if you want to call it that). My Adora calcium disk dipped in peanut butter.

Last night I had a workout with Keri so when I got home I was starving! Fajitas were on the dinner menu with salsa and guacamole on a whole wheat tortilla. If you have not tried Joseph's flax, oat bran and whole wheat flour tortillas you need to, they are delicious!

It is going to be a hot one here in Boston today so if you are in the area stay cool and if you are looking for something to do check out the Jimmy Fund Scooper Bowl at City Hall.
