Chipotle Shrimp Quesadilla

Last night was another night where I would be home late since I had a pilates session scheduled for after work. Joe had the great idea of trying to create shrimp quesadillas. I was totally up for the challenge and if you can't tell we just love Mexican food. I think I could survive off Mexican food, fro yo and pizza, I know real healthy!
I started off the meal with caramelizing some onions in a pan. Once the onions were a nice golden brown I added the shrimp and chipotle peppers in adobo sauce to the pan. I added the whole can of chipotle peppers which may not have been necessary since they were a little spicy.
This mixture alone over some brown rice would be delicious.
Once everything was cooked I spread some guacamole (I guess I didn't get my fix the other night) onto a whole wheat tortilla then added some of the shrimp mixture and topped it with reduced fat Mexican cheese. 

Once I got everything on to the Foreman grill I added the top tortilla and cooked for about 5 minutes until the tortillas were crispy.
I had some refried beans as a side dish to this delicious meal. The quesdaillas were a little messy but for a first try with this recipe they were very tasty!

Turkey Avocado Burgers

Last night I left work and headed to the gym for a 30 minute Pilates session. My legs were still a little sore from my 5 mile run that morning but Pilates actually made them feel better. During my session we did a lot of reformer 3 exercise which were very challenging but lots of fun!

I headed home after my session to make dinner which was turkey burgers and sweet potato fries. Since the frozen fries always take forever Joe threw them.in the oven while I was on my way home. In the mix for the burgers was 99% lean ground turkey, garlic, cumin, chili powder and some fiesta lime seasoning. I formed four parties and put them on the foreman to cook.

Once they were fully cooked I topped them with raw onion, avocado and sharp cheddar cheese.
They were a little messy to get off the grill but they were so delicious.



I dipped my fries in a little of Frank's Thick Hot Sauce which added just the right kick to this meal.

Fitness Fun - Pilates

Pilates is another form of exercise I have been practicing over the past year or so. The form of pilates I have worked primarily with is reformer which incorpoarte exercises using the Pilates reformer machine. Pilates can also be done on a mat using just your own body and sometimes with the use of some props.

Reformer
 Pilates can transform the way your body looks, feels and performs while buidling muscle strength without excess bulk. Pilates is something that continually challenges me no matter how long I have been doing it. The exercises never seem to get easier which is one reason I love Pilates because I am always challenged. Below are some sample exercises of common beginner Pilates exercises.

Race Calendar

Yesterday my day started off with a morning run along with beach with my BOMF Team. It was such a peaceful morning and the weather was ideal. Anytime I run near the beach I find it so peaceful!

After my run I headed to the gym for a quick 30 minute session of Pilates on the reformer. Pilates is something that never gets easy every week I am challenged more and more and I love it!

Since the summer is finally here I have quite a few races scheduled for the upcoming months, some are with Back on My Feet and others are on my own.

Marathon on my Mind

Since I decided not to run Boston this year I have been in a little bit of a slump since the marathon and am eagerly looking for a fall marathon.  Since I did not get in to the ING New York City Marathon I am on the hunt for another marathon. I was thinking of the Portland Maine Marathon, I ran the half last year and loved it (but if anyone has run the full let me know).

This morning was spent with my BOMF team. We ran to the YMCA outdoor track and got in a great workout, we even had two new resident members at Father Bill's show up. After I left my BOMF team I headed to Marylou's for an iced toasted coconut coffee with soy milk. I had been craving another one since the other day.


After I grabbed my coffee I headed to the gym for a pilates workout on the reformer. As you know I am in the process of getting my full certification for pilates but I still love to have a trainer. A picture of the reformer is below in case some of you are not sure what it looks like. If you haven't tried pilates before I would strongly encourage you to.

After my busy morning I was starving and made myself a quick smoothie before heading to work with vanilla unsweetened almond milk, frozen berries, frozen banana, wheat germ, ground flax seed and protein powder, it hit the spot!

My mid morning snack was an asian pear with some of these new nuts I found by Emerald. They are slightly sweet so they can satisfy my sweet cravings when I get them (which is usually not that often.)

Community Day

Yesterday was Comcast Cares Day and a few of my Back on My Feet residents and non-resident members joined in on the fun. We cleaned up the arrears by the YMCA track that we use for our morning workouts. It was a great turnout and a beautiful day.

Before I left a made some Banana French Toast Sticks thanks to Lori Harder. Since I didn't have bread I improvised and used Fiber One whole wheat english muffins.

After being there for a few hours I headed to a Pilates mentoring class which focused on transitioning between moves.  I am certified in Reformer 1 beginner classes but haven't taught any classes yet just practiced on family members.

After class I headed home for lunch just soup and a sandwich and watched the Bruins game, they won!!!
