Day Off @ Castle Island

Today I took the day off from work to watch my niece Abigail. I stayed at my sisters last night because she leaves for work bright and early. We started the morning with a trip to Marylou's for some iced coffee then we headed to drop Kristina off at work. Abigail and I headed over to Castle Island after dropping mommy off at work for a nice morning walk. As you can see Abigail was so thrilled to be there since she slept the whole time.

It was a gorgeous morning for a nice long walk as the weather was partly cloudy and about 70 degrees. We walked about three miles around Castle Island where I enjoyed the beautiful views. (I think Joe and I are going to have our engagement pictures done around here).




After our walk Abigail and I headed to my house for a little while where she got to enjoy some tummy time!

Then it was back home for Abigail where my dad joined us for lunch, which wad leftover spicy chicken pizza that my mom made for dinner last night. This pizza is one of my favorite meals my mom makes.

Spicy Chicken Pizza
package chicken chopped into cubes
1/2 cup green onion
2 garlic cloves minced
2 tbl red wine vinegar
2 tbl olive oil
1/2 tsp crushed red pepper
1 tbl corn starch
1/2 cup monterey jack shredded cheese
1/2 shredded mozzarella
sliced almonds
2 Boboli crusts

Mix green onion, garlic, soy sauce, vinegar, olive oil and chicken together in a bowl and let stand for a half hour.  Add chicken to a pan and cook until done leaving the remaining sauce in the bowl. Add the corn starch to the remaining sauce. Once the chicken is cooked through add the remaining sauce to the pan until the sauce is thick in consistency. Take the chicken mixture and spread it evenly between the two Boboli crusts (the wheat Boboli is what I usually use). Then top with the mozzarella and monterey jack cheese and let cook. Halfway through the pizza cooking you can place the almonds on top so they won't burn. Cook on 350 until the cheese is melted and the crust is crispy, enjoy!

  1. Thanks so much for the advice on running hills. It's so flat around here (mostly) I've become a hill pansy.
    Abigail is adorable....I remember the tummy time days well.
    Favorite place to run? It's hard to pick, pretty much anywhere without traffic on a gorgeous morning will work.

  2. Abigail is adorable! Love the look of that pizza - I bet the almonds are delish on it.

    As far as places to run, I like anywhere with good scenery. That way I don't get bored and can go further. :)
