May Goals

Yesterday's morning snack was Greek yogurt with an apple, cinnamon and walnuts (sorry no pic I was too hungry).

For lunch I made a salad with mixed greens, onions, peppers, mushrooms, broccoli, carrots with tuna. I seasoned the tuna with some red wine vinegar and Mrs. Dash chipotle seasoning.  I despise mayo so I try to come up with other ways to dress it up. I must say the salad was delicious but a little too big I couldn't finish it. I had a handful of raw cashews along with my salad. Cashews have been my new favorite nut lately.



After work I headed to my "Stiletto Camp" which is a fun name my gym came up with for boot camp since it is an all women's gym. I got my sister to sign up with me and my mom usually comes and walks the baby.



After class I had them all over for Hawaiian BBQ chicken that I made in the crockpot. We made the chicken into sandwiches on Arnold's natural whole grain with flaxseed sandwich thins and spinach.

Some goals I have for May.
1. Lose a few pounds.
2. Eat more fruits and vegetables.
3. Try to do 5 chin ups on my own (I can do about 3.5 right now)

4. Take one yoga class a week

  1. BBQ Hawaiian Chicken sounds delicious! I'm interested in hearing how your prepare your tuna w/o mayo... any other suggestions? I'll have to try the red wine vinegar.

  2. @Shannon My favorite way to make tuna is with celery, onions, carrots, green peppers, red kidney beans, red wine vinegar, olive oil, black pepper and italian seasonings. I have also used greek yogurt instead of mayo, then added celery and onions. I want to try it with soy sauce and green onions to give it an Asian feel when I do I will make sure to post it.

  3. i like your goals!! in response to your quinoa question on my blog, i use a very fine strainer and just rinse and rub at them for a long time. hopefully that gets them clean enough!
